GORE HIGH SCHOOL
The caretaker is responsible for the maintenance of

operation of the boilers and other plant.

Fresh and light, these puds have
a tart lemony custard below the
3 eggs, separated
1G2 cup sugar
2 tablespoons flour, sifted
Grated rind and juice of 1 large lemon
1 cup milk
1. Preheat the oven to 175 degrees Celsius.
Grease 6 x 1G2-cup capacity ramekins and
place them in a roasting dish lined with a
paper towel to stop them sliding on the
enamel dish when baking.
2. Whisk the egg yolks and sugar together
until pale and creamy. Whisk in the flour.
3. Fold in the lemon rind and juice alternately
with the milk.
4. In a separate clean bowl, whisk the egg
whites until soft peaks form. Gently fold into
the lemon mixture to form a thin batter.
5. Divide the mixture among the ramekins.
Pour enough boiling water into the roasting
dish to come halfway up the ramekins.
6. Bake in the preheated oven for 20 to 25
minutes until puffed and golden. Serve
immediately dusted with icing sugar.
Preparation time: 15 minutes
Baking time: 20 to 25 minutes
